White Bean Dip Dressed in Green
Hosting parties with good eats doesn't have to assault your waistline, health or your budget. Beans are high in fiber, may aid heart health, include cancer fighting plant chemicals, are low in fat and high in protein. I could go on with the many reasons why you should eat more beans but rather than delaying any longer, let's get to the important part; the recipe!
15 ounce can cannellini beans, drained
2 Tablespoons fresh lemon juice (best with grated rind of organic lemon)
1/3 cup olive oil
1 garlic clove, use garlic press, let sit for 5 minutes and add to above
1/4 cup fresh parsley leaves
Sea Salt and Pepper to your taste preference
Pulse all ingredients in your food processor until creamy. Let sit for a few hours before serving to allow flavors to meld together. Service with your choice of chips, crackers, veggies.
Can also be used as a topping for your baked potato or salad.
Optional ingredients: grated parmesan cheese, minced onion, hot pepper flakes, substitute basil for the parsley.
