Curried Deviled Egg Spread
I've been on a Curry binge and I'll find a way to eat it any way that I can. Curry has numerous health benefits, as do most spices. Off hand, I can't think of a spice that doesn't have health benefits. You don't need to know the benefits to enjoy them. Just remember, Spice Adds Life!
12 hard boiled free range eggs, peeled and mashed using a fork or pastry blender.
3 teaspoons Curry
Sea Salt to taste preference
1/2 Cup Mayonnaise - may need more - adjust to your preference
6 Medjool Dates, minced (can substitute raisins - you'll need more than 6 )
Minced Onion, I like lots - amount is your preference, start with 2 Tablespoons
1 Tablespoon Honey - or to preference
1 teaspoon mustard - optional
Mix all ingredients together and eat on chips, veggies, toast. Heck, I just eat the stuff off of a spoon. And yes, I lick the plate clean much to the chagrin of my children.
Optional: garnish with fresh parsley, cilantro, fresh grind of black pepper or paprika
Optional: add a teaspoon of fresh pressed lemon juice
Optional: if you like it hot, add cayenne or hot pepper flakes
